Ingredients

2 lbs. boneless skinless chicken breasts

pinch Stacey Hawkins Dash of Desperation Seasoning

2 tsp Stacey Hawkins Luscious Lemon Oil (or canola oil)

1 cup light coconut milk
-
1 T Stacey Hawkins Tasty Thai Seasoning
-
2 limes- 1 sliced into ¼ inch slices and the other juiced.

¼ C chopped cilantro, plus some leaves for garnish
-
⅓ C chicken broth
Directions
Season the chicken with Dash of Desperation Seasoning. Add oil to a large skillet and heat over medium high heat.
Sauté the chicken on both sides for 4-5 minutes per side until slightly browned. Set Aside.
Add the coconut milk, Tasty Thai Seasoning, the juice from one of the limes to a small bowl and whisk together.
Add the chicken broth to the bottom of the skillet & scrape up the brown bits off the bottom. Bring to a simmer and add the coconut mixture and the cilantro leaves and bring to a simmer. Turn down the heat, add the chicken back to the pan and simmer for 6-8 minutes until liquid is reduced by half and chicken is fully cooked.
Sprinkle with cilantro leaves and lime slices for garnish and enjoy with your favorite side dishes!*
