This vibrant Cajun Caesar Salad is anything but boring. Crisp romaine is layered with red-roast garden tomatoes, colorful bell peppers, and juicy sautéed chicken breast seasoned with Stacey Hawkins' Kickin' Cajun blend. Finished with a rich, creamy Parmesan dressing, it’s bold, balanced, and satisfying—a salad that eats like a full-on meal. Colorful, crave-worthy, and done in minutes.
Ingredients
Cajun Chicken Salad

1 pound boneless skinless chicken breast

1 - 2 T Stacey Hawkins Kickin’ Cajun Seasoning

2 T Stacey Hawkins Roasted Garlic Oil
-
1 head romaine lettuce, cut into quarters lengthwise
-
1 C sliced peppers (preferably yellow, orange, red)
-
½ C sliced cherry tomatoes
Creamy Cajun Parm Dressing
-
¼ C apple cider vinegar
-
⅓ C mayonnaise
-
⅓ C sour cream
-
1 T Stacey Hawkins Kickin’ Cajun Seasoning

⅓ C freshly grated Parmesan Cheese + 4 Tablespoons set aside
Directions
Prepare the dressing
Combine all ingredients in a bowl and stir to combine. Add a tablespoon of water to thin if desired.
Prepare the Chicken
Slice chicken breasts very thin,
Add Roasted Garlic Oil to a hot pan (preferably cast iron) and saute for 2-3 minutes on each side until cooked.
Place 1-2 pieces of the romaine on a plate. Top with peppers and tomatoes. Add hot chicken & desired amount of dressing. Sprinkle with Dash of Desperation and 1 T Parmesan Cheese. Serve immediately or cover & place in the fridge until ready to serve. Enjoy!
