This quick and easy salad is a perfect side dish for Spring! The crisp-tender asparagus combined with zesty lemon and garlic vinaigrette and topped with crumbled Feta cheese makes for a Lean and Green Recipe, Optavia Recipe that is sure to please!
Make a double batch and refrigerate as this salad is terrific the next day and goes great with any grilled meats, fish or as a stand alone salad.

Directions
Remove the woody ends from the asparagus.
Chop the asparagus into 2-3" long pieces and rinse. Shake off excess water and place in a microwave safe bowl.
Microwave on high for 2 minutes. Toss the asparagus and cook for an additional minute at a time until crisp-tender.
While asparagus is cooking, make the vinaigrette by adding the oil, vinegar and Simply Brilliant into a large bowl. Whisk to combine.
When asparagus is finished cooking, rinse in icy cold water to stop the cooking. Shake off excess water and add the asparagus to the bowl with the vinaigrette.
Crumble the feta over the asparagus and add a pinch of Dash of Desperation. Toss together with tongs and serve chilled.
