Simply Scrumptious Bruschetta a lean and green recipe

Bruschetta (pronounced bruce-sket-ah) is a wonderfully versatile tomato topping with hundreds of uses.  Make a batch & keep it in the fridge as a topping for chicken, over a salad, pour over a block of goat cheese & serve with crackers for a yummy appetizer and much more!  This is perfect for those on the Optavia Recipe / Program, a low carb program or as part of a diabetic lifestyle as well!

2 C      fresh tomatoes, diced (you can use unseasoned, no sugar added canned tomatoes as well)

1 tsp   Stacey Hawkins Viva Italiano Blend

1 T   Stacey Hawkins Garlic Gusto Seasoning

4 tsp   Stacey Hawkins Balsamic Mosto Cotto


Place all ingredients in a small bowl and toss to coat.  Let sit for 20 minutes and then enjoy.  May be placed in an airtight container and kept refrigerated for up to one week.  Makes 2 cups.
