Here, we pair these Lemon Dill Roasted Radishes with Mediterranean Roasted Chicken to make a one-oven meal that is incredible!
Spicy and crisp when raw, the delectable red radish takes on a whole new flavor when roasted! Unlike other root veggies, however, the radish is SUPER low in calories and in carbohydrates, making it a perfect side dish. The creamy, sweet and light flavor pairs well with any protein or makes a great addition to salads.

Directions
- Preheat oven to 350 degrees
Trim ends and tops of radishes, cut in half (all radish pieces should be about the same size- if you have small ones, leave them whole, big ones should be cut in 1/4, etc.)
- Add all ingredients to a large bowl and toss to coat.
- Place radishes in an oven-save roasting dish and place in oven, center rack, for 30 minutes. If you have a cast iron skillet, this is the PERFECT time to use it!
- Serve hot
