Juicy Grilled Chicken with Tangy Tomato Relish
Summer tomatoes! We just can't get enough of them in this easy and delicious Lean and Green Recipe! Make a batch of this tangy, delicious relish and use to dress up ANY grilled fish, meat, chicken or even eggs!
Keeps for up to 1 week in an airtight container in the fridge.
1 C diced tomatoes (use a variety of colors for best results)
¼ C chopped scallions, greens and whites included
½ packet no calorie sweetener of your choice (or liquid stevia- 4 drops)
2 T red wine vinegar
2 pounds boneless, skinless chicken breasts
Add tomatoes and scallions to a medium sized bowl.
Sprinkle with Garlic and Spring Onion seasoning, sweetener and vinegar.
Using 2 spoons, gently toss to combine all the flavors together.
Set aside for 15 minutes at the minimum to allow the flavors to develop.
Sprinkle both sides of chicken with Dash of Desperation
Grill, pan sauté, or bake until desired temperature is reached.
Remove from heat, let cool and slice for serving.
Place 6 ounces of chicken breast on a plate and top with ¼ C of relish. Enjoy!
