Ingredients

nonstick cooking spray
-
24 ounces boneless, skinless chicken thighs, excess fat removed.

salt & pepper (or Dash of Desperation Seasoning if you want MORE flavor)

4 ounces scallion whites, sliced

½ C chicken stock
-
1 tsp Stacey Hawkins Rosemary Versatility Seasoning

2 T Stacey Hawkins Deluxe Honey Mustard Seasoning
Directions
Spray a cast iron skillet with nonstick cooking spray and place over high heat. Add chicken when pan is hot and season with salt & pepper (or Dash of Desperation.) Let the chicken cook for on one side for 4 minutes until a lovely brown crust appears.
Flip the chicken over to the other side and add the scallions. Stir to combine and let the chicken cook for an additional 4 minutes.
Add the remaining ingredients and stir to combine (the mustard may take a little bit to dissolve- but it will!). Bring to a boil and then reduce heat to medium. Let the liquid simmer for 6-8 minutes until reduced to a nice glaze and chicken is thoroughly cooked (verify with a meat thermometer)
Remove from heat and serve hot with your favorite green vegetables.
