Ingredients

4 C shredded rotisserie chicken

½ C chicken broth, divided

2 C broccoli florets (or cauliflower)

1 C sliced carrots

½ C plain Greek yogurt (NOT vanilla)

1 T Stacey Hawkins Spices of India

1 tsp Stacey Hawkins Dash of Desperation

¼ C dried fruit (sliced apricots, craisins or raisins)

¼ C almonds- slivered or whole (optional garnish)
Directions
Place broccoli and carrots in a microwave-safe bowl. Add ¼ C of the chicken broth. Cover and microwave for 2 minutes or until crisp-tender, but not overcooked.
Add remaining ingredients to a large bowl. Toss to coat. Serve immediately (or chill if making ahead of time). If you would like it warm, cover the bowl and microwave on medium-high for 2-3 minutes.
Garnish with nuts if desired.
