This Crispy Chicken Thighs with Herb-Roasted Radishes is the kind of sheet pan dinner that makes you feel like you’ve got your life together — without actually working that hard. Juicy, golden chicken thighs roast alongside radishes tossed with herbs and Stacey Hawkins shortcut seasonings, soaking up all that savory goodness as they caramelize.
Everything cooks together on one pan (because we do not need more dishes in our lives), and then it’s served over fresh arugula with a drizzle of our balsamic for that perfect peppery-sweet finish.

Ingredients

6 bone in, skin-on chicken thighs (about 3 pounds)

1 ½ pounds red radishes (one bag)

3 T Stacey Hawkins Roasted Garlic Oil

2 T Stacey Hawkins Farmhouse Chicken & Veggie

6 C baby arugula
-
2-3 T Stacey Hawkins Balsamic Mosto Cotto
Directions
Preheat oven to 450°F.
Trim the ends off the radishes, cut larger ones in half, and add them to a large bowl with the chicken. Toss with the Roasted Garlic Oil and Farmhouse Chicken Seasoning. Pour onto a sheet pan and spread into a single layer.
Roast in the oven until a thermometer reads 160°F (about 30-35 minutes).
Divide arugula among the plates and drizzle with Balsamic Mosto Cotto and a pinch of salt & pepper (or better yet, Dash of Desperation!) Place the chicken and radishes over the arugula and serve. Enjoy!
