This classic Medifast recipe is one I actually created and was used in one of the very first Medifast Cookbooks. I’m proud to have contributed and share the recipe here, with a slight twist.

A sublime, quick and easy meal you can enjoy as a weeknight meal or Sunday Dinner.

Ingredients
1½ lb. boneless, skinless chicken breasts

4 tsp Stacey Hawkins Roasted Garlic Oil (or fresh garlic & oil)
1 T Dijon mustard
1 T whole grain mustard
1 C low-sodium Chicken broth

1 T Stacey Hawkins Garlic Gusto Seasoning (or fresh crushed garlic, parsley, lemon and onion)
4C broccoli florets, fresh

Pinch Stacey Hawkins Dash of Desperation Seasoning (or salt, pepper, onion, garlic and parsley)
Directions
Whisk together mustard and broth in a bowl, set aside.
In a large frying pan (with lid), heat oil over medium high heat. Add broccoli and season with Garlic Gusto. Cook for approx. 2 minutes, stirring broccoli to coat it in the oil and seasoning.
Pour broccoli into a bowl and set aside.
Place the pan back over the heat and add the chicken, browning it on each side for 4-5 minutes.
Reduce heat to medium. Pour chicken broth & mustard mixture over the chicken.
Add the broccoli and cover the pan with a lid. Let simmer for 5-7 minutes, until chicken is thoroughly cooked and broccoli is bright green & tender crisp- not overcooked.
Remove from heat and serve hot. Season with Dash of Desperation for additional flavor.
