Lemony Chicken Scampi and Zucchini Noodles- a Lean and Green Meal

This one pot dinner will have you LOVING chicken breast again, no matter how sick of it you may be!  Combining the flavors of lemon, garlic and herbs, scampi does NOT need to be high in fat or calories, nor does it have to be swimming in oil to taste magnificent.  This Lean and Green Meal makes it easy to throw something together FAST that you family, your tastebuds AND your waistline will love.

Lemony Chicken Scampi and Zucchini Noodles- a Lean and Green Meal

  1. Cut chicken into thin strips (about 1/4" thick). Place in a bowl, sprinkle with Skinny Scampi seasoning, toss to coat and set aside.

  2. If you're making your own zucchini noodles, go ahead and spiral cut them at this time.  If using bagged veggie noodles, go to the next step.

  3. In a large frying pan heat oil over medium high heat. Add chicken and cook for approx. 7-10 minutes until chicken is fully cooked. Stir the chicken occasionally to cook on all sides.

  4. Pour the cooked chicken into a bowl and cover the bowl with an upside down plate to keep it warm.

  5. Place the pan back on the heat and add the zucchini.

  6. Saute the zucchini for just one minute to soften, but not overcook. Season with a pinch of Dash of Desperation to taste.

  7. Add the warm chicken back to the pan and using tongs, toss with the zucchini noodles.  Serve hot.
