This is one of my all-time favorite recipes because it is so easy, you just throw it all in the slow cooker and walk away. The results are hearty, tangy and everyone seems to just love it. A Lean and Green recipe that also complies with Medifast recipes, 1/4 of this recipe is 1 lean, 1 & 1/2 green and 2 healthy fat options. Nutritional information is below. Enjoy!
4 chicken breasts (about 1 1/2 lbs total) bone in and skin removed
1/2 C roasted red pepper strips (about 1- 12 oz jar)
1/2 C sun dried tomatoes, chopped
1 13 oz can chopped artichoke hearts, drained well
3 T capers
Place chicken breasts in the slow cooker, bone side down.
In a small bowl, combine remaining ingredients and then pour over the chicken.
Place the lid on the slow cooker and cook on low heat for 8 hours until chicken is fork tender.
Steamed green beans and/or garlic wilted spinach.
For family: Serve with parmesan bowtie pasta.
1/4 of this recipe= 390 calories, 42.4g protein, 8.6g fat, 6.4g carbs, 2.5g fiber
