Zucchini Carpaccio

It's zucchini season!  What to do to make a low carb recipe that isn't the same old, same old?

Yes- the zucchini is raw. And it's delicious!  Not to mention that raw zucchini is super loaded with crunch and texture, but tons of vitamins and minerals otherwise lost in cooking.
This recipe is easy, delicious and gorgeous to serve.

  1. Whisk together seasonings, oil and vinegar in a bowl. Set aside.

  2. Arrange sliced zucchini on a plate.

  3. Drizzle lemon dill sauce over the zucchini.

  4. Sprinkle with crumbled feta cheese.

  5. Serve immediately.
