Chef's Notes & More
Chef's Notes:
How long should I marinade?
Thinner cuts of steak (like flank or skirt) should be marinaded 2-4 hours.
Tougher cuts like tri-tip or sirloin should be marinated for 8 hours, or at best, overnight.
What should I do with the leftover marinade?
You may be tempted to use it as a sauce right out of the bag... but do NOT! The bacteria from the raw meat is harmful. Don't fret, however! You can turn that marinade into a delicious sauce by pouring it into a small sauce pan and bringing to a boil and reducing the liquid by half. Drizzle it over the steak, or roasted potatoes and enjoy!
