Oh, poor maligned zucchini! During summer, this delicate green squash seems to be EVERYWHERE and, well, it can be b-o-r-i-n-g and repetitive and you can just get sick of it. Truth is, however, creating the BEST zucchini is just a simple lean & green recipe away!

Directions
Preheat outdoor grill to medium-high (300°F).
Trim ends off zucchini and cut lengthwise in half.
Cut halves into quarters or thirds depending on thickness (lengthwise to make long strips.)
Place zucchini flesh side up on a platter.
Drizzle with oil, sprinkle with seasoning.
Place on grill, skin side DOWN and grill for 5 minutes. Flip zucchini and cook 5 additional minutes. Turn off the grill and let rest for an additional 5 minutes.
Serve hot.
