These tender, juicy morsels are kicked up a notch with a sprinkle of Kickin' Cajun Seasoning and then drizzled with a decadent garlicky sauce that will melt in your mouth. Made from start to finish in less than 20 minutes, it's a perfect quick and easy weeknight meal!
It's also a low carb recipe, adaptable for those on Optavia and even though it sounds extravagant, is actually lower in calories!

Ingredients

2 pounds pork tenderloin or chicken breast cut into 1-inch cubes

1-2 T Stacey Hawkins Kickin’ Cajun Seasoning (use more if you prefer it spicy)

2 Tablespoons Stacey Hawkins Roasted Garlic oil

2 Tablespoons butter
-
1 Tablespoon Stacey Hawkins Garlic & Spring Onion Seasoning

1 Tablespoon fresh lemon juice
-
¼ C low sodium chicken broth
-
fresh parsley, scallions or basil, shredded for garnish (if desired)
Directions
Cut meat into chunks and dry with a paper towel. Add to a bowl, season with Kickin’ Cajun and toss to coat.
In a large skillet, add the Roasted Garlic Oil over medium high heat. Add the pork and sear for 2-3 minutes on each side until browned & cooked through. Transfer to a plate, cover and keep warm.
In the same skillet, add the butter and melt over medium heat. Add the Garlic & Spring Onion and stir. Add the chicken broth and the lemon juice to the pan and scrape to get all the yummy bits off the bottom.
Add the pork back to the pan and toss in the sauce. Sprinkle with garnish if desired and serve immediately.

1) For more even cooking and more tender meat, cut it, cover and let it come to room temperature for about 1/2 hour before cooking.
2) If you like a spicier dish, use 2 T of Kickin' Cajun Seasoning
3) Did you know that recent studies have shown that pork tenderloin has the same amount of fat as boneless, skinless chicken breast? It's true! So as you're counting calories, or portion sizes, you can take this into account. If you're interested in reading more, here's a link to the study.
