The warm, rich combination of smoky chipotles, shrimp and tomatoes can be transformed in less than 10 minutes to make a Lean and Green recipe that will become a go-to favorite. Perfect for a lunch or dinner. Serve over cauliflower rice or steamed broccoli.

Ingredients

1 C scallions (whites and greens) or chopped onion
1 1/2 lbs. wild caught shrimp, shelled, deveined and tails removed
1 C diced tomatoes (unflavored, no sugar added)

1 T (one capful) Stacey Hawkins Cinnamon Chipotle Seasoning
- 1/2 large lime, juiced (optional)
2 T fresh cilantro, chopped (optional)
Directions
Heat oil in a medium sized frying pan over medium high heat.
Add onion and cook 2 minutes until translucent. Add shrimp and cook for 1 minute on each side.
Add tomatoes and cinnamon chipotle seasoning.
Cook an additional 2-3 minutes until tomatoes are hot and shrimp is opaque.
Drizzle with lemon juice and add cilantro. Serve warm.
