Slow Cooked Chicken with Fire Roasted Tomatoes and Garlic (a Lean and Green Recipe)
I love, love, love my slow cooker (Crock Pot) because it does all the work! Just a few minutes to throw everything together, put the lid on, and voila- when I come home dinner is pretty much done.
No matter what your schedule, this easy chicken with fire roasted tomatoes and garlic recipe is one that will become a staple in your household, just like it has mine. 1 1/2 lbs. boneless, skinless chicken breast
1 15oz can fire roasted tomatoes (any variety- BUT make sure no extra added sugar)
Place chicken in the bottom of the slow cooker. Pour tomatoes over chicken and sprinkle with seasoning. Place lid on the slow cooker and cook on low for 8 hours.
When finished, serve chicken breasts with a dollop of tomatoes on top or shred chicken with 2 forks.
Serve hot. Also great over salad the next day!
