What's better than a sheet pan dinner? One that's full of flavor AND is a low carb recipe, Optavia Lean and Green Recipe and that takes just a few minutes to prep!
We love this recipe for a quick and easy weeknight meal and for the fact that you can pretty much swap out ANY veggies you like that are on program.

Ingredients

1 ¾ lbs boneless skinless chicken breast pieces

⅓ C low sodium chicken broth

4 tsp Stacey Hawkins Roasted Garlic Oil
-
1 Tablespoon Stacey Hawkins Farmhouse Chicken & Veggie Seasoning
-
12 oz red radishes, ends trimmed and diced
-
12 oz green beans, ends trimmed
-
Pinch Stacey Hawkins Dash of Desperation Seasoning

Directions
Preheat oven to 400° F. Lightly spray a baking sheet with nonstick spray. Trim the beans and radishes and dice the radishes into ½” chunks.
In a small bowl, combine broth, oil and Farmhouse Chicken & Veggie Seasoning.
Arrange the chicken breasts on the baking sheet. Arrange the radishes and green beans around the chicken. Toss ½ C of the sauce through the chicken and veggies and season with a pinch of Dash of Desperation. Give all a quick coat of nonstick spray for a little protection from the heat.
Bake in the preheated oven for 15 minutes. Remove the tray from the oven, flip the chicken breasts over and pour the remaining sauce over all. Cook for an additional 10-12 minutes, until chicken reaches a temperature of 170° F and veggies are roasted fork tender.
For additional color and flavor, you may place the entire sheet pan under the broiler for just 2-3 minutes. If time does not allow, that’s totally ok! Enjoy as is.

Feel free to swap out the veggies for those you may prefer. Asparagus, broccoli and peppers all work really well with this recipe. In addition, if you're cooking for a family, you can put diced potatoes coated in a little oil and Dash of Desperation on the sheet pan as well. Just make sure they are about the same size as the radishes.
