Ingredients
-
2 T Stacey Hawkins Valencia Orange Oil
-
2 T neutral oil like olive or canola
-
1 ¾ pounds boneless, skinless chicken breast, cut into thin strips

1 T Stacey Hawkins Wok On Seasoning
-
4 C sliced vegetables (colored peppers, snow peas, zucchini, etc.)
-
3 scallions, whites and greens sliced & separated
-
½ medium white onion, sliced*
-
½ C chicken stock
-
1 T rice wine vinegar
-
Prepared rice, or cauliflower rice if desired

Sesame seeds (or a pinch of Stacey Hawkins Toasted Sesame Ginger) for garnish, if desired.
Directions
Heat oil(s) in a large sauce pan over medium heat.
Add chicken and cook for 3-5 minutes until opaque. Add onions and white parts of the scallions and cook for 1 minute. Add remaining vegetables, sprinkle with seasoning and cook for an additional 3-5 minutes until everything has a little bit of browned color.
Add Stock** and vinegar, stir to coat. Cover with a lid and cook for just a minute or 2 more, until veggies are tender.
While veggies are cooking, prepare the rice.
Remove the lid, continue to simmer for an additional minute until liquid is reduced by half**. Place rice on a plate and top with stir fry mixture. Garnish with the green parts of the scallions, a pinch of sesame seeds and enjoy!

* Omit if you are on Optavia
** If you like a thicker glaze type sauce, instead of reducing, mix 1/2 tsp of corn starch with the stock before adding to the mixture & then cook as directed.
