It is said that this classic chicken recipe is SO good it'll bring you marriage proposals- so with a review like that you know I had to put a Stacey Hawkins Wow! spin on it!
This low carb chicken recipe really IS that good, especially with the additional pop of flavor from the Dash of Desperation and Sicilian Tomato & Herb seasonings combined with peppery arugula and rich, creamy sauce. It's also SUPER easy and fast to make, leaving plenty of time for the proposal after dinner.

Ingredients

2 pounds chicken breast cutlets, sliced or pounded thin

1 tsp Stacey Hawkins Dash of Desperation Seasoning
-
4 tsp Stacey Hawkins Roasted Garlic Oil
-
1.5 ounces fresh arugula
-
½ C chicken broth
-
4 sun dried tomatoes (in water or on their own, not in oil) sliced in quarters

½ C Half and Half
-
1 T Stacey Hawkins Sicilian Tomato & Herb Seasoning
-
2 T low-fat cream cheese
-
salt and pepper to taste as desired
Directions
Sprinkle chicken with Dash of Desperation Seasoning. Heat oil in a skillet over medium heat. Cook the chicken until browned and just cooked through, about 5-7 minutes minutes. Transfer to a plate, cover and keep warm.
Add the arugula to the pan and sauté for 1 minute.
Increase the heat to high, add chicken broth, sun dried tomatoes, half and half (and any juice from the chicken plate) and Sicilian Tomato and Herb to the pan. Scrape any bits off the bottom of the pan to incorporate into the sauce. Bring to a boil and then turn the heat to medium. Let the sauce simmer until reduced by half and slightly thickened. Add the cream cheese and stir to combine once melted. This will help thicken and set the sauce.
Add the chicken back to the pan and turn to coat with the sauce. Serve the chicken topped with the sauce and accompanied with your choice of side dishes. Enjoy!
