Ingredients

2 pounds boneless skinless chicken thighs (see notes for breasts)

1 pound baby potatoes, 1” round, quartered into small pieces (ok to cut in half if tiny)

4 C broccoli florets (fresh)

Nonstick cooking spray

Sauce of your choice if desired- use straight Tahini for rich flavor or my Tzatziki sauce for a pop of brightness. Or both!
MARINADE

⅓ C olive oil
-
1 T Stacey Hawkins Garlic & Spring Onion Seasoning
-
2 tsp Stacey Hawkins Mediterranean Seasoning
-
1 T Dijon mustard
-
3 T Lemon Juice
-
zest from ½ a large lemon (2 tsp)
Directions
Preheat oven to 400° F
In a large mixing bowl, combine all marinade ingredients. Whisk to combine.
Add the chicken thighs, broccoli florets and potato pieces to the bowl. Toss to coat & let rest while oven comes to temperature.
Pour the contents onto a large sheet pan (*hint- line the sheet pan with foil for quick and easy clean up!) Either way, be sure to spray the pan or foil with nonstick spray first.
Bake at 400° F for 20-25 minutes until your chicken thighs reach 165° F on an instant read thermometer.
Drizzle with sauce and serve hot.
Chef's Notes & More
For chicken breasts, use thin chicken breasts that are equal in thickness & gently pound the chicken to make it 1/4-3/8" thick first. Otherwise the chicken will not cook in time allowed.
