This Juicy Peach Bruschetta with Lemon Ricotta is a fresh twist on a classic—sweet peaches take the place of tomatoes in this surprisingly different (and ridiculously refreshing) dish.

Ingredients

½ C ricotta or cottage cheese, any style but nonfat

1 tsp lemon peel

1 tsp honey, agave, or a few drops of liquid stevia

¼ tsp fresh lemon juice

1 whole peach
-
5-7 pieces fresh basil

1 T Stacey Hawkins Balsamic Mosto Cotto

Pinch Stacey Hawkins Tangy Lemon Salt

Toasted baguette slices if desired
Directions
Slice the peach in half and remove the pit. Place halves cut side down on a plate and microwave on high for 1-2 minutes until soft.
Cut the peach into thin slices or dice depending on which dish you prefer.
Add cheese, lemon peel, lemon juice, and sweetener to a food processor. Whip together until light and creamy.
Side Dish
If making as a side dish, place a dollop of cheese in the center of the plate and drag the spoon through it to make a smear.
Place a spoonful of diced peaches on the smear, drizzle with Balsamic Mosto Cotto and a pinch of Tangy Lemon Salt. Garnish with basil leaves- torn or cut up into small pieces. Serve immediately or chill and serve later.
Appetizer
Place a small dollop of cheese on the toasted baguette. Top with sliced peaches, a pinch of Tangy Lemon Salt, and drizzle with Balsamic Mosto Cotto. Garnish with basil leaves- torn or cut into small pieces. Serve immediately or chill and serve later.
