Ingredients

1 pound pasta- any variety good for salad

3 C sliced cucumbers

1 pint cherry or grape tomatoes cut in half

1 can (15 oz) chickpeas, drained

1 C Kalamata olives
-
6-8 oz feta cheese, crumbled

1 T Stacey Hawkins Mediterranean Seasoning

Stacey Hawkins Cyprian Sea Salt to taste
Directions
Cook the pasta according to the package directions, ensuring it is cooked in salted water (use table salt, not Cyprian salt). Drain and rinse under very cool water to stop the cooking process and prevent it from becoming mushy.
While the pasta is cooking, add cucumbers, tomatoes, olives, and chickpeas to a large enough bowl to hold the pasta. Add 1C of the vinaigrette* and toss to coat.
When the pasta is cool, add it to the mixture. Using two large spoons, gently “pull” the vinaigrette and veggies up through the pasta. Season with salt if needed. Sprinkle cheese over the top, serve, and enjoy!

* We start with 1 C of vinaigrette. After this sits, you may want to add more to taste as the pasta tends to soak it up. If more is desired, simply drizzle it on and toss to coat just before serving.

There are 1,000,001 things that you can do to change this pasta salad depending on what you have on hand and what your taste preferences are. Have fresh deal from the garden? Throw it in! Want to put in some sweet or red onion? Great idea. Don't have any cherry tomatoes, but have big ones? Dice them up! Have extra zucchini or yellow squash in the garden? Throw in some raw slices. That's the beauty of pasta salad, anything goes!
