Ingredients

1 ¾ pounds boneless, skinless chicken breast

6 C raw mixed vegetables, trimmed and sliced

1 T Stacey Hawkins Tuscan Fantasy Seasoning
Directions
Preheat oven to 350° F. Make 4 foil packets by cutting 12” pieces of foil from the roll.
Place 7 ounces of raw chicken in each foil packet*
Add ¼ of the vegetable mixture over each piece of chicken.
Sprinkle equal amounts of seasoning over each packet. Seal the foil packets and place on a sheet pan. Arrange in such a way that they are not overlapping.
Bake for 20 - 25 minutes, depending on the thickness of the chicken. Verify chicken has reached 160° F with a meat thermometer.
Arrange the contents of the foil packets on a plate and enjoy!

* If serving alone, use 7 ounces of protein per packet. If serving with a 2 oz shrimp cocktail appetizer, use 5 ounces of chicken. These measurements account for shrinkage and will yield 6 ounces and 4 ounces respectively.
