Nothing says comfort food like a scoop of mashed potatoes on your plate. Especially with a holiday meal! Try this easy, creamy mashed fauxtatoes featuring cauliflower instead for a low-carb version that’s guilt free and absolutely delicious. Keep ’em coming!
6 C cauliflower florets
2 T light cream cheese (Neufchatel)
½-1 tsp chicken or vegetable broth
- Chop cauliflower into small pieces, (bite sized).
- In a large pot, bring enough water to a rolling boil to cover the cauliflower. Cook cauliflower 6-8 minutes, until very tender, but not overdone. Drain cauliflower in a strainer.
- With the pot empty, put a clean kitchen towel in the bottom. Pour the drained cauliflower back into the pot, on top of the towel & remove all excess water. Remove the towel, leaving the cauliflower behind. Add cream cheese, seasonings & 1/2 tsp broth to the pot.
- Using an immersion blender (stick blender) or hand-held electric mixer, or potato masher, mash mixture until fluffy. Add more broth if necessary. Season with a pinch or two of Dash.
