Creamy Cauliflower No-Tato Salad
Prepare cauliflower by steaming until JUST fork tender. After cooking, shock in icy cold water to chill and stop the cooking.
*Let rest for 5 minutes and then drain very well, shaking off all excess water.
In a large mixing bowl, combine cider vinegar, mayo (or yogurt) and seasonings together. Add celery and cauliflower. Toss to coat.
Chill for 1 hour before serving.

(if using mayo) -or- 3 Condiments and 0 Healthy Fats if using yogurt.
* If you don't do this, the cauliflower will keep cooking and turn to mush, ruining the consistency of your salad!
