Who doesn’t love making dinner in less than 10 minutes per night? With simple ingredients on hand and some great seasonings to work with, this easy lean and green recipe is not only fast, it’s incredibly delicious.
Serve alone or on a bed of cauliflower rice or cabbage rice, or even the next day over salad. This medifast recipe equals 1 lean and 2 greens for every 7 ounces of shrimp and 1 cup of greens.
1 1/2 lbs wild caught, raw shrimp, cleaned and tails removed
6 cups baby spinach greens, arugula greens, beet greens or a combination
Heat oil in a large frying pan over medium high heat. Add shrimp and sprinkle with seasoning. Stir to coat and cook for 3-4 minutes. Using tongs, flip the shrimp over once and cook for one minute. Add greens to the pan. Toss to coat. Let greens cook for 1-2 minutes until wilted. Serve hot.
