Chicken in Truffle Cream Sauce
Every now and then a Lean and Green Recipe comes along that totally knocks my socks off! This is a little something I threw together for an Optavia 5 &1 recipe idea and the results speak for themselves.
The creamy, incredible combination of cream and truffle together make for an out of this world meal that you have to taste to believe. And YES it IS on program!!!

6 ounces portobello (or baby bella or white) mushrooms, sliced
1 ½ lbs. – Boneless Skinless Chicken Breast Cut into 1" chunks
½ C – low sodium chicken broth
4 T reduced fat cream cheese
- Heat oil in a large skillet over medium high heat
Add mushrooms and cook for 4-5 minutes, until liquid is released and mushrooms are slightly browned.
Add chicken and cook for 7-9 minutes, until chicken is slightly browned.
Add broth and cream cheese, simmer for one additional minute until cream cheese is melted.
Add truffle seasoning
Cook an additional 2-3 minutes until sauce is thick and chicken is cooked through
Serve over cauliflower rice, zucchini noodles, regular rice (if not on program) or enjoy as-is!
