Ingredients

4 teaspoons Stacey Hawkins Luscious Lemon Oil

1 ¾ pounds thin sliced chicken breast

1 Tablespoon Stacey Hawkins Farmhouse Chicken & Veggie Seasoning

1 C chicken broth
-
1 T fresh squeezed lemon juice
-
1 teaspoon Stacey Hawkins Citrus Dill Seasoning

4 T low-fat cream cheese cut into ½” chunks
-
1 14 ounce can artichoke hearts in water, drained and chopped
-
4 ounces fresh spinach, roughly chopped
Directions
Sprinkle the chicken breasts with the Farmhouse Chicken Seasoning.
Add the Lemon Oil to a nonstick frying pan over medium high heat. Add the chicken breasts and cook for 6-8 minutes until cooked through, flipping the chicken over halfway through cooking.
Transfer the chicken to a plate and cover to keep warm. Put the pan back on the heat and add the chicken broth, Citrus Dill and lemon juice to the pan. Bring to a simmer and add the cream cheese. Whisk together until combined. Toss in the artichokes and spinach. Stir until spinach is wilted. Add chicken back to the pan and simmer for just a minute or two to thicken the sauce. Serve hot.
