Every now and then a recipe comes along that REALLY blows me away!
Enter Cheesy chicken bacon ranch chicken- a combination of gooey delicious mozzarella, smoky rich bacon and the tang of (dairy free) ranch seasoning in one easy, Lean and Green meal.
The flavors are amazing, the dish is so decadent (um, THIS is diet food??!!) and the fact that it complies with program is awesome. This dish is definitely one you AND those you cook for will absolutely love.
Optavia Stacey Hawkins
1 ½ pounds boneless skinless chicken breasts
1 Tablespoon Stacey Hawkins Rockin Ranch Seasoning
4 strips turkey bacon*
Nonstick cooking spray
¼ C shredded mozzarella cheese (use smoked if you can find it)
Sprinkle the ranch seasoning over the chicken breasts. Wrap in plastic, or put in a zipper style bag and let sit for 15 minutes, up to overnight in the fridge.
In a large, oven-safe frying pan, cook the turkey bacon until crisp. Place on a paper towel to drain off the excess fat and set aside to cool.
Using a paper towel, wipe the pan clean. Spray with nonstick cooking spray and place over medium high heat.
Add the chicken breasts and cook for 10-15 minutes until chicken reaches a temp of 160° F (it will finish cooking during the next step), turning once to slightly brown on both sides.
Sprinkle the chicken with the cheese and bacon. Place under a broiler until cheese is melted. Remove from the broiler and do a temperature test of the chicken- it should be 165° F to serve for maximum juiciness.
Serve hot and enjoy!
