Ingredients

5 large Roma tomatoes

1 T Stacey Hawkins Farmhouse Chicken & Vegetable Seasoning

½ C low-fat shredded mozzarella cheese

¼ C grated Parmesan cheese (fresh- not from the shaker)

2 tsp Stacey Hawkins Roasted Garlic Oil
-
Salt and pepper as desired

1 T Stacey Hawkins Balsamic Mosto Cotto (optional)

Fresh basil if desired
Directions
Preheat oven to 400° F. Line a baking sheet with parchment paper.
Slice the tomatoes into ½” slices. Place slices on the baking sheet and sprinkle with a pinch of Farmhouse Chicken Seasoning.
In a small bowl, combine the cheeses. Sprinkle equal amounts of cheese on top of each tomato. Drizzle with Roasted Garlic Oil.
Bake for 8-10 minutes until cheese is bubbly. Be careful not to overbake, however, or they will get mushy.
Place slices under the broiler for 2-3 minutes until slightly browned. Drizzle with Balsamic Mosto Cotto and/or fresh basil if desired and serve hot.

1) Be sure to use Roma tomatoes or other tomatoes with a lower moisture content. A wet tomato will yield mushy results.
2) Be sure not to crowd the tomatoes on the baking dish. Doing so will prevent the air from circulating around the tomatoes and the will not roast, they will steam. This too will lead to mushy results.
3) These are fantastic warm, or even at room temp as an appetizer.
