½ tsp Stacey Hawkins Dash of Desperation Seasoning

¾ C Stacey Hawkins Herbed Butter Cracker Panko

1 T Stacey Hawkins Rockin’ Ranch Seasoning

4 (5-7 oz.) cod fillets (1 ½” thick)

nonstick cooking spray or olive oil spray
-
⅓ C mayonnaise- any style
-
¼ C chopped dill pickles
-
½ tsp Stacey Hawkins Rockin’ Ranch Seasoning
TARTAR SAUCE
Directions
Preheat air fryer to 375° F. Line the air fryer basket with a liner.
Whisk together egg and Dash of Desperation Seasoning. In a separate bowl, combine together Herbed Butter Cracker Panko and Rockin’ Ranch Seasoning.
Dip a fillet into the egg mixture, then dredge in panko mixture to coat. Repeat with all fillets, arranging them in the air fryer basket. Give the fillets a quick coat of nonstick cooking spray (or olive oil spray.) If you need to, work in batches.
Cook for 7 minutes. Carefully flip the fillets over, spray with cooking spray and cook an additional 7 minutes until fish is fork-flaky (or reaches in internal temp of 115° F.) ** Please note that your cooking time may vary depending on the thickness of the fish. Keep an eye on it so it does not over cook and dry out.
While fish is cooking, make the Tartar Sauce by combining all the ingredients together in a small bowl.
Serve with fresh lemon wedges & parsley (if desired) and enjoy!
