Cool, crisp cucumbers meet a punchy (EASY!) Asian-inspired dressing, crunchy peanuts, and a sprinkle of sass in this Stacey Hawkins stunner. Just a handful of fresh, crunchy, and tangy ingredients come together in minutes to create a side dish that’s light, bold, and downright irresistible.

Ingredients

1 medium English cucumber (or 4 small garden cucumbers)

2 T Stacey Hawkins Valencia Orange Oil

1 T Stacey Hawkins Wok On Seasoning

2 T rice wine vinegar

¼ C peanuts*
Directions
Cut the cucumber into thin slices.
Add Valencia orange oil, Wok On, and rice wine vinegar. Toss to coat. Add the peanuts and toss again.
Place in an airtight container and store in the fridge for 15 minutes to an hour to let the flavors develop. Toss again before serving chilled. Enjoy!
Chef's Notes & More
* I LOVE using crispy Virginia style peanuts in this recipe. However, any style peanuts will do just fine. A word of caution, however, don't chop the peanuts as they will absorb the moisture much faster and you'll lose the crispiness that really adds to this dish.
