Waste Not Want Not

More often than not, we wind up with leftovers.

Whether it's cooked veggies that just didn't get eaten or it's little scraps of this and that left over after we trim, chop and prep, something often gets left behind.

Should we just throw them away?

Heck no! That's like flushing money down the drain. With the price of food these days, especially if you're buying organic, it would be a sin to let leftovers go bad or those little scraps go to waste.

What to do?

The easiest thing to do is to take anything that is even somewhat usable, put it in a baggie or container and throw it in the fridge. As you gather more and more throughout the week, throw them in the same bag and then transform them into something incredible on the weekend!

Like what?

Well, I'm glad you asked!  Leftover cooked veggies can be added to the likes of frittatas, soups, stews and even scrambled eggs. Raw veggies can be juiced and used to make a broth, or sauteed to make soup, sauces and so much more!

Don't waste, be in wonder!

I've included a few of my favorite recipes below to help you knock it out of the park and transform those scraps into deliciousness. You'll be amazed at the results.

Happy Cooking!
