There is just something so comforting and delicious about noodles in cream sauce!
This recipe for zucchini noodles with truffle cream sauce takes all the guilt out of eating Low Carb Recipes and of course makes you feel like you're totally splurging on your Optavia Recipes Diet... but I promise it is on program and delicious!!
Enjoy a batch with grilled chicken, fish or shrimp. It's also amazing as a base for scallops or clams. Omg Yum! Make it traditionally, or spice it up with a pinch of chives and crushed red pepper flakes (like I did above). Either way, you're going to LOVE it!

Ingredients

nonstick cooking spray
-
8 oz raw zucchini noodles (spirals or strips)

4 T light cream cheese
-
2 tsp Stacey Hawkins Truffle & Black Garlic Parmesan Seasoning

pinch of crushed red pepper flakes*

pinch of chives or parsley*
Directions
Spray a nonstick skillet with nonstick cooking spray and heat over medium high heat.
Add zucchini noodles and sauté for 1-2 minutes until zucchini is slightly softened. (Will be additional time if using pappardelle like strips).
Move the zucchini to one side of the pan and add the cream cheese. Stir until melted. Sprinkle in the Truffle Seasoning & stir. Toss with the noodles to coat.
If a little kick of spice is desired (really makes the flavor of this dish POP!) add a pinch of red pepper flakes. Garnish with fresh herbs and serve hot.
