Zesty Chicken Chili with Avocado Cream

I was introduced to "white chili" on a European mountain long ago and far away while on a skiing trip. The creamy texture was hearty, rich, and robust, and satisfied my freezing soul after a long day of picking myself up and falling down again. Everywhere we went, I tried different varieties and came home to develop my own recipe (and of course, the spice to go with it!)
With no beans, no potatoes, and no tomatoes, you may say- "where's the chili? where's the fun?" I promise you, you won't miss them, not in the least! This creamy, rich chili reads more like a traditional stew, but with the smooth, decadent avocado cream on top, you won't CARE what it's called- it's just delicious!
The lack of starchy carbs makes this a perfect lean and green meal. The lack of work makes it even more so. Try this one today, and I promise it will satisfy you as much as it does me (and my kids- this one is a BIG favorite for them!)

Ingredients
CHILI

28 ounces 98% lean chicken breast, cut into chunks

1 teaspoon Stacey Hawkins Dash of Desperation Seasoning

1 cup chopped scallions (primarily whites)
- 1/4 C low sodium chicken broth
-
2 Tablespoons (2 Capfuls) Stacey Hawkins Zesty White Chili Seasoning

1 Tablespoon Stacey Hawkins Lit Garlic Seasoning

1 ⅓ Cup Light Sour Cream (divided)

fresh cilantro leaves, or scallion greens, or fresh diced jalapeno for garnish if desired
AVOCADO CREAM

6 ounces avocado
-
1 T fresh lime juice
-
pinch Dash of Desperation Seasoning
Directions
First, make the Avocado Cream. Next, spray a sauté pan (with a lid) with nonstick cooking spray. Heat over medium-high heat. Add meat and season with Dash of Desperation seasoning. Sauté for 3 minutes and then add the scallions. Cook for an additional 3-5 minutes, until the chicken is fully cooked but not browned.
Add chicken broth, Zesty White Chili Seasoning, Lit Garlic Seasoning, and 1 C sour cream. Stir to combine and bring to a boil.
Reduce the heat to a simmer, cover, and cook for an additional 2-3 minutes.
Divide into 4 equal portions, add 1 T of Avocado cream, and garnish with fresh chopped jalapenos, cilantro, or scallion greens, if desired.
AVOCADO CREAM
In a small bowl, mash the avocado. Add lime juice, ⅓ C sour cream, and a pinch of Dash of Desperation seasoning, whisking to combine. Whisk less for a chunkier cream, more for a smoother one.
