Ingredients

1 medium onion, chopped

2 T Stacey Hawkins Garlic and Spring Onion Seasoning

1 T Stacey Hawkins Spices of India

1 ½ pounds boneless, skinless chicken breast

1- 13oz can unsweetened coconut milk

3 T tomato paste
-
1 tsp salt & fresh ground pepper to taste

juice of ½ a lime

fresh cilantro (if desired)

Instant brown rice, cauliflower rice, or pita (naan) of your choice
Directions
Add onion and seasonings to a 6-quart slow cooker. Cut chicken into 1” pieces and add them to the slow cooker.
In a bowl or measuring cup, add coconut milk, tomato paste, salt & pepper (or better yet, use 2 tsp of Dash of Desperation!), and lime juice. Whisk to combine and then pour over the chicken.
Cover and cook on low for 6-7 hours, until chicken is tender, but not overcooked. You could cook on high for 4 hours as well, or in a pressure cooker for 30 minutes with natural release.
Cook rice according to package directions and serve with the coconut chicken. Enjoy!
