Tender and Tasty Fish Tacos
Tender, flaky Alaskan Cod is not only packed with protein, but with 150 calories for a 7 ounce serving, it makes for an AWESOME low-carb meal.
While being a powerhouse for protein and calories, it's also pretty bland and has a mild flavor which makes it a perfect canvas for seasoning. After just a few minutes, the cod takes on the flavor of whatever it's mixed with, resulting in tasty, mouthwatering morsels you can use in many ways.
It's also SUPER easy to cook- you really don't have to be intimidated by this fish, and you also don't have to eat it ONLY as a filet, baked or broiled with lemon. With cod, we can get creative- because after all, we want flavor- we want excitement- we want... fish tacos!! It actually will take longer to assemble your favorite condiments for this tender and tasty dish than it will to cook it! The flexibility of this dish makes it a PERFECT family meal as well. Put out a spread of taco toppings and let everyone customize their own.

- Pat fish dry and cut into 1" chunks
- Sprinkle seasoning over fish and toss to coat.
- Heat Roasted Garlic Oil in a large, nonstick frying pan over medium - high heat.
- Add fish and cook for 10 - 12 minutes, until fish is opaque and breaks apart into flakes. Be careful not to overcook or the fish will be dry and chewy.
- Serve hot with your favorite condiments.
- Makes about 4 servings.
