Tender, flaky Alaskan Cod is not only packed with protein, but with 150 calories for a 7 ounce serving, it makes for an AWESOME low-carb meal.
While being a powerhouse for protein and calories, it's also pretty bland and has a mild flavor which makes it a perfect canvas for seasoning. After just a few minutes, the cod takes on the flavor of whatever it's mixed with, resulting in tasty, mouthwatering morsels you can use in many ways.
It's also SUPER easy to cook- you really don't have to be intimidated by this fish, and you also don't have to eat it ONLY as a filet, baked or broiled with lemon. With cod, we can get creative- because after all, we want flavor- we want excitement- we want... fish tacos!! As if you weren't enticed enough by the protein, the calories, the flavor and the ease of cooking this little fish, I've got one more bonus for you- it cooks in 10 minutes. #truth!
It actually will take longer to assemble your favorite condiments for this tender and tasty dish than it will to cook it! The flexibility of this dish makes it a PERFECT family meal as well. Put out a spread of taco toppings and let everyone customize their own.

Ingredients
1 3/4 lbs. cod or haddock (wild caught)

1 capful (1 Tablespoon) Stacey Hawkins Southwestern Seasoning

or Phoenix Sunrise Seasoning or cumin, cilantro, garlic, onion, red pepper, paprika, parsley, salt & pepper (or low sodium taco seasoning)

4 teaspoons Stacey Hawkins Roasted Garlic Oil or oil of your choice and fresh garlic
- your favorite taco condiments (for a list of quantities and Optavia approved condiments, click here (scroll to bottom of page)
Directions
- Pat fish dry and cut into 1" chunks
- Sprinkle seasoning over fish and toss to coat.
- Heat Roasted Garlic Oil in a large, nonstick frying pan over medium - high heat.
- Add fish and cook for 10 - 12 minutes, until fish is opaque and breaks apart into flakes. Be careful not to overcook or the fish will be dry and chewy.
- Serve hot with your favorite condiments.
- Makes about 4 servings.
