This sheet pan summer dinner is the ultimate weeknight win—fresh, fast, and fantastically flavorful.
Juicy chicken and a colorful mix of garden veggies (zucchini, summer squash, peppers, onions, tomatoes—whatever’s overflowing from your basket!) get tossed with Stacey Hawkins’ Roasted Garlic Oil and a generous sprinkle of Tuscan Fantasy Seasoning.
In under 30 minutes, the veggies roast until tender and caramelized while the chicken stays perfectly juicy, filling your kitchen with savory, garlicky, herb-packed aromas. Simple to make, endlessly versatile, and absolutely delicious, this is summer on a pan—Mediterranean-style.

Ingredients

8 C mixed fresh vegetables (zucchini, yellow squash, onion, tomato, peppers, etc.)

1 pound chicken breast cut into thin strips

2 T Stacey Hawkins Tuscan Fantasy Seasoning

2 T Stacey Hawkins Roasted Garlic Oil
Directions
Preheat oven to 350°F.
Cut veggies into ¾ inch chunks or slices*.
Slice chicken breast.
Add all veggies and chicken to a large bowl. Sprinkle with seasoning and oil. Toss to coat.
Pour onto a large sheet pan, big enough to have everything in one layer. Bake for 30 minutes until the chicken is fully cooked and the veggies are slightly browned.
Serve warm and enjoy!
