8 slices of blue cheese (see tip below)

Stacey Hawkins Tangy Lemon Salt
Directions
Pat pear slices dry using a clean cloth.
Take a pear slice, a few pieces of arugula, and a slice of cheese. Gently wrap them together with a slice of prosciutto and skewer.
Repeat with the remaining ingredients.
Place a small dollop of honey on the serving plate in each space where you will put a pear slice. This will anchor them to the plate.
Arrange all slices as desired and finish with a pinch of Tangy Lemon Salt. Enjoy!
Chef's Notes & More
Stacey's Tips
1- for the prosciutto, use a pizza cutter that has been sprayed with nonstick spray to easily make the slices.
2- for the blue cheese, make sure the cheese is cold and use a sharp knife that has been sitting in a glass of hot water to cut the cheese. Do not wipe the water off the blade as it will help make the slicing easier. Wipe off the blade and place back in the water each time.
