Peppered Puttanesca – a Lean and Green Recipe
Succulent chicken breast takes on a whole new life with this easy recipe that’s both lean and green and low carb as well as Optavia recipe friendly. The tang of tomatoes and capers along with sweet bell peppers cook up to make a mouthwateringly delicious meal perfect for meal prep, family meals and more.
In a large frying pan, heat oil until sizzling. Add chicken and sauté for 2 minutes, until chicken is opaque.
Reduce heat to medium. Add remaining ingredients to the pan.
Cover the pan and cook for 5-7 minutes until peppers are soft and chicken is thoroughly cooked.
