Chicken cordon bleu is a comfort food classic of crispy breadcrumbs crusted boneless, skinless chicken breasts wrapped around thinly sliced ham and melted cheese. So just HOW do we make it Optavia recipe friendly?

Ingredients

24 oz chicken breast*

½ T Stacey Hawkins Lit Garlic Seasoning

4 oz 97% (or greater) ham, sliced very thin

2 oz reduced fat Swiss cheese, shredded

nonstick cooking spray

4 T Stacey Hawkins Herbed Butter Cracker Panko

4 T reduced fat cream cheese

¼ C unsweetened almond milk
-
1 T good quality Dijon mustard

½ T Stacey Hawkins Lit Garlic Seasoning

Dijon Cream Sauce
Directions
Chicken
Preheat oven to 350° F. While heating, prepare the chicken by slicing the chicken in half horizontally, without going all the way through to the opposite side. The goal is to be able to open the chicken breast like a book, stuff them, and then close shut.
Spray a baking dish (large enough to hold the chicken in one layer) with nonstick cooking spray.
With the chicken breast open, sprinkle it with Lit Garlic Seasoning. Layer ¼ of the ham over the chicken and sprinkle with ¼ of the cheese. “Close” the chicken so that the stuffing is on the inside. Seal closed with a toothpick to keep the filling from falling out.
Place all breasts in the dish, spray the chicken with nonstick cooking spray and sprinkle with Herbed Butter Cracker Panko.
Bake for 20-30 minutes until chicken has an internal temp of 155° F. Remove from the oven, cover with foil and let rest for 5-7 minutes until temperature reaches 160° F. Drizzle with sauce and serve hot with your favorite Greens. Enjoy!
Dijon Cream Sauce
While chicken is baking, make the cream sauce by adding the cream cheese to a small, microwave safe bowl. Microwave on high for 30 second intervals until cream cheese is soft.
Add remaining ingredients to bowl and whisk gently to combine. Microwave on medium high for 1 minute more to create the sauce. Set aside and let flavors develop while chicken is cooking. When chicken comes out of the oven and is resting, microwave the sauce on high for 30 seconds to 1 minute to heat. Pour over chicken right before serving. Add salt and pepper to taste if desired.
