Crunchy Cauliflower Salad a Lean and Green Recipe

Cauliflower is all the rage right now and what better way to take advantage of this sweet, crunchy little veggie than with a crunchy salad that’s also a Lean and Green Recipe?!  

Perfect for summer sides, for bbq’s and picnics and will travel just about anywhere, this recipe is satisfyingly crisp, crunchy and filling all at the same time.  Oh, and 100% guilt free, not matter what program you are on!

Crunchy Cauliflower Salad a Lean and Green Recipe

  • Prep Time:  10 Minutes
  • Cook Time: 0 Minutes
  • Total Time: 40 Minutes

Servings: 8- half cup servings




  1. Add all ingredients to a mixing bowl and toss to combine.

  2.  Let rest for 30 minutes, up to overnight to allow flavors to combine. 

  3. Store in the refrigerator in a covered bowl for up to one week.
