Bacon Ranch Cheeseburger Soup

This quick and easy recipe for Low Carb Bacon Ranch Cheeseburger Soup is a family favorite! Rich, creamy and delicious, this warm bowl of comfort food will have you smiling every bite of the way. Perfect for anyone on Optavia, Optavia 5&1, Wegovy or any low carb program. Want in on a secret though? ANYONE lucky enough to get a bowl of this will love it!
Garnish with a little parsley as I've done above or cover with crispy shredded iceberg lettuce for a real cheeseburger treat!
12 oz 93% lean ground beef (to yield 10 oz)
4 C beef broth
4 T light cream cheese
8 slices turkey bacon, cooked and crumbled - divided
4 oz reduced fat shredded cheddar cheese, divided
A few parsley sprigs or fresh shredded lettuce for garnish
Place a large soup pot on the stove over medium high heat. Add the ground beef and sprinkle with Rockin’ Ranch Seasoning. Cook the beef until slightly browned (about 10 minutes) breaking up the clumps into small pieces while sautéing.
Add the beef broth and bring to a boil. Reduce to a simmer and add the cream cheese. Stir until melted and then add ½ the bacon and ½ the shredded cheddar. Stir until combined.
Divide soup into 4 equal portions and garnish with the additional shredded cheddar cheese, bacon and greens if desired. Serve hot.
