Looking for a tasty rice substitute? This incredibly flavorful & EASY dish goes great with chicken or shrimp to make a fabulous Lean and Green Meal. Try it!
4 cup cabbage, minced into rice like texture (can also use cabbage slaw blend- watch carrots)
1/2 cup water
fresh lime slice
fresh cilantro & green onion (optional)
Mince cabbage into a fine, rice like texture. On medium heat, saute’ cabbage and spices in lime juice in water for 1-2 minutes. Squeeze 1-2 slices of lime over the cabbage and simmer for another 3-5 minutes until tender, stirring occasionally and adding water as needed. Remove from heat and mix in fresh, minced cilantro just before serving.
1 cup of cabbage rice is 2 green servings
