⅓ C salted butter

1 tsp Sinful Cinnamon

½ C milk (cow, unsweetened almond / oat)

1 tsp vanilla (extract or paste)

¾ C all-purpose flour or equivalent

1 ½ tsp baking powder

1 tsp sea salt, ground fine

1 tsp Awesome Autumn Blend

3 large eggs

½ C sugar

4 medium or 3 large apples (firm, crisp)
Directions
Preheat oven to 375°F. Grease a 9 x 5 loaf pan—line with unbleached parchment paper for easier removal.
Melt the butter and Sinful Cinnamon in a small saucepan over low heat. Stir for one minute, then add the milk and vanilla. Set the mixture aside to cool slightly.
In a medium bowl, whisk together the flour, baking powder, salt, and Awesome Autumn. Set aside.
Using a stand mixer, whisk together the eggs and sugar for 1-2 minutes on medium until they are pale and fluffy. Be sure to scrape the bowl 1-2x to incorporate the ingredients.
Add ½ of the dry ingredients to the mixer bowl and whisk on low until incorporated. Add the milk mixture slowly. Then add the remaining dry ingredients. Whisk on low until you have a smooth batter.
Peel and core the apples. Cut them in half and then slice 1/16” thick. Use a mandolin to make this super fast.
Gently fold the apples into the batter, one handful at a time. Using a large spoon (or your clean hands), transfer the coated apples into the prepared pan one cup at a time. Gently flatten the apples as you go. Repeat this process until all the apple slices have been added.
Once completed, tap the pan to remove all the air. If desired, sprinkle one additional Tablespoon of sugar on top. Bake for 60-70 minutes on the center rack of the oven. A toothpick should come out clean, and the center should have no jiggle. The top should be slightly browned.
Allow the cake to cool in the pan for an hour. Run a knife along the edges and remove the cake to the rack. Allow to cool for one additional hour before slicing and serving.
