Talk about Wow!?? If our low-carb eggroll in a bowl wasn't enough to blow you away, Stacey now brings you Reuben in a bowl- complete with the crunch!


Here, the combination of crisp, tender cabbage, the tang of sauerkraut, and a pile of deli corned beef (who knew 5 ounces would be so much!) gets topped with melty Swiss cheese and a dollop of Thousand Island dressing for a dinner you'll rave about over and over again.


The real flavor comes from the addition of Garlic Gusto Seasoning and Rockin' Ranch Seasoning. It's the shortcut you need and cuts the hours of slow-cooking work out of the equation! Both seasonings work harmoniously together to give you the rich, tangy flavor you crave in a crispy, crunchy, and juicy Reuben.


Speaking of crunch, I promise you won't miss the bread as the crispy-ness of the cabbage gives you great mouth feel while the silky luxe of the remainder of the ingredients will take you to an Irish Pub before you can say top o' the mornin'!

Ingredients

  • Nonstick cooking spray

  • 6 ounces raw green cabbage, sliced thin

  • 1 tsp Stacey Hawkins Garlic Gusto Seasoning

  • 1 tsp Stacey Hawkins Rockin' Ranch Seasoning

  • 10 ounces deli sliced corned beef

  • 4 T reduced fat Swiss cheese, grated (2 ounces)

  • 1 C sauerkraut*

  • 4 T nonfat Thousand Island style dressing (like Walden Farms)

Directions

  1. Spray a large pan with nonstick cooking spray and heat over medium-high heat.

  2. Add cabbage and sauté for 5-7 minutes, until crisp-tender, but not overcooked.

  3. Add the corned beef and sauerkraut, and sprinkle with seasonings. Sauté together for an additional 5 minutes, until steaming. The corned beef and kraut are already cooked, so you really just need to heat them up.

  4. Using tongs, divide the cabbage mixture equally between two bowls.

  5. Sprinkle with cheese and place under the broiler to melt.

  6. Top each with 2 T Thousand Island dressing and serve hot. Enjoy!
