As Summer draws to a close and gardens aren't producing quite as much anymore, we wind up with a lot of "ones" and "twos" of things. Not enough for a meal, but certainly not wanting to go to waste, what do we DO with all these odds and ends?


Primavera Mixed Grill!


Not only does this SUPER easy recipe make a Lean and Green meal that is delicious and bountiful, but it also cooks up in one basket with no mess and no heating the house.


Primavera Mixed Grill is also one of my "Little Black Dress Recipes" - that is, a recipe with basic ingredients that you can mix and match with hundreds of combinations of Stacey Hawkins Spices & Oils to yield many different flavor results. A few of my favorites?


Roasted Garlic Oil, Mediterranean Seasoning, Dash of Desperation

Truthfully, the combinations are endless! The flavors will be changed by the combination of vegetables you choose. The truth is, it doesn't matter WHAT you use (as long as you follow guidelines if you're on Optavia 5&1 ), and the more color, the better!


In my mix above, I used red and green peppers, yellow squash, onion, and carrots from my garden (I've transitioned, so carrots are ok- but substitute something else if you're on 5 &1). As you can see, the colors are absolutely gorgeous, before AND after cooking!

Ingredients

Directions

  1. Preheat outdoor grill (or indoor oven) to 400° F

  2. Peel, seed and chop the vegetables into 1" chunks. Add to a large bowl. 

  3. Cut the chicken into 1" chunks. Add to the bowl.

  4. Pour oil and seasonings over the chicken & veg and toss to coat.

  5. Place mixture into a grill basket and place on the grill. (Or baking dish and into the oven).

  6. Close the lid and cook for 30 minutes, tossing the mixture 1/2 way through cooking for even browning. Meal will be ready when chicken reaches 165° F (verify with a meat thermometer).

  7. Remove from the heat and scoop the mixture into your favorite serving dish. Let the chicken rest for a few minutes before serving and enjoy!
