Ingredients
1/3 C coconut flour
1 1/2 C liquid egg whites
1/2 tsp SH Dash of Desperation
- 1/4 tsp baking powder
- 1/2 C water
nonstick cooking spray
Directions
- Spray a 7-8" nonstick pan with nonstick spray and set over medium heat.
Mix together all the remaining ingredients- note that the mix will seem watery.
- Using a ladle, pour about 1/4 C liquid into the bottom of the pan and using the handle of the pan, swirl the liquid around to cover the bottom.
- Cook for 2-3 minutes and then gently run a spatula around the edges to loosen. If it seems a tad sticky or wet, wait until it releases.
- Gently flip the tortilla over and cook until slightly brown on the other side. When finished, slide onto a plate and keep warm until ready to use.
- Repeat the process until all tortillas are cooked
